I have Projects and Stages as separate databases. Now, when entering a specific Project page, I want to link a Stages table, where only the Stages linked to the project are shown. I know, I can do this manually by creating a filter on the related Project. Can this somehow be automatically achieved, so that I can create a working template?

Yes, in your projects database create a template in the right side inside the "New" blue button, there is a small arrow pointing down, click there and create your template.

With this any new project you create using that button, will include anything you added to the template.
